Honey Roasted Carrots with Thyme, Shallot & Pistachio

This recipe for honey roasted carrots is bathed in honey herbs and shallots, then roasted overhigh heat until tender and caramelized. The added crunch of the pistachio creates the perfectcombination of textures and flavor. A super easy yet elegant side dish!

Ingredients

  • 1 pound tri-colored carrots washed
  • 4 tablespoons melted butter
  • 1/4 cup honey
  • 2 large shallot sliced
  • 2 Tbs chopped fresh thyme
  • 1 cup chopped pistachio
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 400 degrees farenheit and line a baking sheet with parchment paper.
  2. Wash the carrots and keep on the skin for a rustic presentation. Cut into halves lengthwise. Place the carrots in a single layer on the baking pan.
  3. In a small bowl, mix together the melted butter, honey, thyme, sliced shallot, salt and pepper. Pour the honey mixture over the carrots and toss to coat.
  4. Place in the oven and bake for 25-35 minutes or until carrots are tender and browned. Roasting time may vary depending on the size of the carrots.
  5. Remove from the oven and transfer to a serving dish (I like usiing white so the colors pop on the plate), sprinkled with chopped pistachio and serve.
